The Food Service Director (FSD) will be a local hire that will be responsible for the day-to-day operation of the kitchen at a County Jail. This individual will be responsible for ordering all groceries and supplies for the operation. The FSD will be responsible for scheduling the kitchen employees to ensure proper coverage of all shifts. They will be responsible for ensuring all menus and recipes are followed. This will be done with the use of production sheets and recipe cards. They will have responsibility for weekly financials to include payroll, inventory and tacking meal counts for billing purposes. The FSD will assist the District Manager (DM) in hiring the kitchen employees and be responsible for training them.
